Vodka and Chorizo Spaghetti
Serves: 4
Ingredients
360g uncooked. spaghetti
1 ring chorizo (buy high-quality chorizo from M&S or Sainsbury's for a much nicer dish), cut into slices the thickness of a pound coin
oil, to fry
4 banana shallots, roughly chopped
4 cloves garlic, finely minced
1 red chilli, finely minced.
90ml vodka
150ml single cream
1 1/2tsp lemon zest
250ml pasta water
salt and pepper, to season
Parsley, parmesan garlic and chilli oil, to serve
Method
- Cook the spaghetti in heavily salted water. Once cooked until slightly undercooked (this is important as we will further cook the pasta later) pour out the water, reserving roughly 250ml. Set aside.
- Meanwhile, fry the oil in a large frying pan. Once shimmering, add in the chorizo. Once crispy and the oils are released, add in the shallots and fry until soft.
- Add in the garlic and chilli.
- Pour in the vodka and bring it to a boil before reducing to a simmer, Fry for 5-10 minutes, or until the vodka has been reduced and the alcohol has been partially burned off.
- Add in the cream and stir in the lemon zest.
- Season to your liking. Pour in the pasta water and simmer until the sauce has reduced.
- Add in the pasta and stir until the sauce coats the pasta evenly. Cook until the sauce clings to the pasta.
- Serve with a garnish of parsley, parmesan (lots of it!) and chilli and garlic oil.
