Balti Chicken Curry


Serves: 4


Ingredients

  • 3 tbsp tomato puree

  • 2 tbsp Greek yoghurt

  • 2 tbsp garam masala

  • 1 tsp chilli powder

  • 1 tsp minced garlic

  • 1 tbsp mango chutney (optional)

  • pinch salt

  • 1 tsp sugar

  • 3 tbsp oil

  • 4 chicken breasts, diced

  • 4 birds' eye chillies, roughly chopped

  • handful coriander, roughly chopped

  • 2 tbsp cream

  • coriander leaves, to garnish

  • pilau rice, to serve

  • garlic naan, to serve (optional)


Method


- Combine the tomato puree, yoghurt, garam masala, garlic, chilli powder, chutney, sugar and salt together in a bowl.


- Heat the oil in a frying pan. Once it is hot and shimmering, add in the tomato-spice mix. Cook for around 2 minutes while stirring every so often.


- Add the diced chicken with a splash of cold water and cook for 30-40 minutes, stirring occasionally. The chicken should be tender.


- Add the chillies, coriander, and cream. Stir well and cook for a further 10 minutes before serving with coriander, pilau rice and garlic bread.
