Oven-baked Asian sea bass

Delicious, flavourful, quick and easy - you cannot go wrong! Well, unless you decide to spice it up and choose Basa fillets, then undercook it... a mistake never to be made again.
Anyway, onto the recipe!
Oven-baked Asian sea bass
Serves: 2
Ingredients
2 sea bass fillets
Fine sea salt
1 inch ginger grated
2 cloves garlic, finely chopped
1 red chilli, sliced
1 packet Shiitake mushrooms
1 packet Pak choi, trimmed
Lime wedges to serve
Coriander to serve
1 spring onion, finely sliced, to serve
Toasted sesame seeds, optional
Brown or jasmine rice
For the sauce
60 ml chicken stock
2tsp sesame oil
1tbsp sherry
2tbsp light soy sauce
2 tsp brown sugar
Method
Preheat the oven to 180 degrees Celsius, fan.
Place the pak choi leaves in a deep-set baking tray lined with tin foil.
Place the sea bass fillets on top. Sprinkle the mushrooms around the fish, followed by the garlic, ginger, and chilli.
Combine all the ingredients for the sauce in a saucepan over medium heat. Once it simmers, pour it over the fish.
Seal the fish tightly with some tin foil on top and bake for 20 minutes.
Meanwhile, boil the rice.
Once the fish is cooked through, serve with the rice, and sprinkle with some spring onions, coriander, optional sesame seeds, and a squeeze of lime.
