Sticky Asian Beef Lettuce Cups

These are quick, easy, healthy and the best part: so delicious!! Great for summer when its hot, or April if you are experiencing the UK Heatwave (hottest temperature EVER recorded in the UK for April - 27 degrees Celsius!!)
Sticky Asian Beef Lettuce Cups
Serves: 4
Ingredients
1 red pepper
2 tbsp grapeseed oil
1 1/2 shallots, finely minced
2 chilli, finely minced
1 1/2 1/2 ginger, finely grated or minced
3 cloves of garlic, minced
1 lime grated
750g low-fat minced beef
2 tsp ground coriander
4 tsp Chinese five spice
1 star anise
2 tsp garlic granules
1/2 lime juice and zest
1 1/2 tbsp fish sauce
2 tsp brown sugar
1 1/2 tbsp soy sauce
4 tbsp hoisin
45ml sherry
4 spring onions, finely sliced
handful of coriander
lime wedges, to serve
Sriracha or sesame oil
Method
Heat 1 tbsp oil in a large frying pan over a medium-high heat. Once it is shimmering, add in the peppers and onions. F
Meanwhile, heat the remaining 2 tbsp of oil in a separate pan and add the beef. Break it up with a spoon and fry for 20 minutes. Stir every 5.
Once the beef is starting to turn sticky (almost burning but not quite!), add in the onions and peppers, sherry, soy sauce, and hoisin. Stir everything.
Add all the chilli, garlic, lime, and ginger.
Add in the fish sauce for some tartness, and the sugar to balance this out. Stir everything together.
Add in the lime juice and zest. Reserve the other half for serving. Cook until all the beef has reduced and is starting to turn sticky.
Serve in cod lettuce cups, and sprinkle with sesame oil, sriracha, coriander, and spring onion.
