Banana Oat Waffles
Serves: 4 waffles
Ingredients
175g oats, blitzed into a fine flour
60g walnuts or pecans
120g banana
1 tsp baking powder
1/2 tsp baking soda
300ml coconut milk ( or any other milk )
1 tbsp cider vinegar
1 tsp vanilla essence
1 tsp ground cinnamon
coconut oil
Method
- Preheat the waffle iron.
- Blitz all the dry ingredients together in the blender until blended into a fine powder.
- Add in the rest until a thick smooth-ish batter forms.
- Grease the iron with coconut oil and pour in a quarter of the batter. Close and let it cook for 5-7 minutes ( my iron tells me when it's ready)
- And you're good to go! I served this with banana, almond butter, vanilla yoghurt or cream and honey but you can even serve these savoury.
Here are a few of my favourite combinations:
- Smoked salmon, creamed beetroot, avocado, cream cheese and a honey mustard sauce.
-Smoked salmon, poached egg, smashed avocado, rocket, creme fraiche or sriracha
- Hot smoked salmon, dill, spring onions, chopped beetroot and a yoghurt and horseradish sauce.
