Melt-in-the Middle Brownies
Serves: 10 brownies
Ingredients
224g coconut oil
115g sugar with stevia, or more for a sweeter brownies ( or double the amount with any type of other sugar )
3 eggs
1 yolk
1 tsp vanilla essence
pinch salt
1 tsp coffee extract or instant coffee, optional
84g cacao powder
84g spelt flour
100g 70% dark chocolate, chopped into chunks
Method
- Preheat the oven to 180 degrees c, fan. Line a tray of your choice, I used a loaf pan.
- Melt the oil then quickly whisk the sugar, salt and oil for 1 minute. Don't worry if the two don't combine that well, to begin with, the egg will help with that.
- Whisk in the eggs, yolk, vanilla and coffee extract until everything combines together to form a smooth, thick and glossy paste.
- Beat everything together with an electric whisk for about 2 minutes or until it changes to a paler colour.
- In a medium bowl, whisk the cacao and flour.
- Sprinkle the flour over the egg mixture then fold it in until JUST combined. Add the chocolate chunks in and fold until evenly distributed in the batter.
- Pour the batter into the lined tray and pop it in the oven until the edges come out with a few moist crumbs and the middle comes out fairly gooey ( Mine took 15 minutes ) but it could be more dependent upon different ovens, preferences etc.
- Allow to cool in the pan before slicing into 10 pieces and enjoy with chocolate sauce and vanilla ice cream!
