Raw Brownies

Can you just see how these glisten with fudgey ( Have I spelt that right, cause my laptop always changes it?? ) and goo.

As usual, these are rich and and totally fulfil that chocolate satisfaction. So put that mars bar down! and take one of these.

The top is smooth and creamy with an almost mouse like consistency. Then the 'brownie' itself is chewy and gooey and sweet to satisfy that craving.

And on top of that these are really healthy. I actually prefer these to normal brownies so it's a win win for me.

These are packed with dates, nuts, raw cacao ( which is 30g fibre per 100g!! ) and the secret ingredient... avacado!

Raw Brownies

Serves: 6 small brownies

Ingredients

  • 110g Medjool dates( if not medal, soak them in boiling water for a few minutes first )

  • 66g cashews ( or almonds, although cashews make the brownies naturally sweeter )

  • 35g maple syrup

  • 30g cacao powder

  • 1/2 tsp vanilla ( 1/2 vanilla pod )

For the Frosting

  • 15g cacao powder

  • 1 ripe avocado

  • 30g maple syrup

  • 25g coconut oil, melted (optional, add more to harden- up to double )

  • salt, to sprinkle

  • goji berries, to serve

Method

- Line a tin with baking paper or tin foil ( to make life a bit easier ).

- Blitz all the dry ingredients until a coarse powder. Remove to a bowl.

- Blitz the dates until they form a paste. Add in the dry and combine the two together in pulses.

- Once fully combined, press the mixture into the pan.

- For the frosting, mush the avocado with a fork. If you're not using the coconut oil, stir in the cacao powder slowly until fully incorporated. It should be light and whipped.

- Stir in the honey, to taste.

- If using the oil, whisk it into the mushed avocado first before adding the cacao powder and oil. Or if you can't be bothered you could just stick it all in the blender together at the same time...

- Spread it over the brownie base then either freeze, for denser brownies or refrigerate for gooier brownies.

- Serve with a sprinkle of salt and goji berries.
