Rich Paleo Brownies

These brownies are such a treat and on the verge of being gooey and just pure amazing. A lot healthier than normal brownies and Gluten free AND Paleo. I mean what more can you want. The chocolate you use is so important to the brownies' final taste so make sure you use quality ( I used Lindt ).

Rich and Fudgy Paleo Brownies

Serves: 4

Ingredients

  • 80g dark chocolate (70%)

  • 60g sugar of your preference

  • 40g coconut oil

  • 1 tsp vanilla essence

  • 1 egg

  • 35g walnuts, chopped

  • 1 tbsp cacao powder

  • 1 1/2 tbsp tapioca starch ( or any other type of starch )

  • 25g ground almonds

  • pinch salt

For the Frosting

  • half avocado, mashed

  • 1 tbsp coconut oil, melted

  • 1 tsp honey

  • 20g cacao powder ( I actually used half lucuma powder and half cacao as lucuma is slightly sweeter- if you don't have this just add more honey )

Method

- Preheat the oven to 180 degrees celsius, fan.

- Combine all the dry ingredients together until no lumps remain.

- Melt the coconut oil and chocolate in a medium sized bowl in the microwave in short bursts ( or over the hob in a saucepan ).

- Let the mixture cool until no longer hot and add the vanilla, sugar and egg. Whisk until shiny ( the mixture may look a bit grainy ).

- Gradually stir in the dry mix, folding in the walnuts last.

- Pour in a lined pan big enough for the batter and bake until the top looks 'cracky' and no longer wet or gooey. Make sure it's still squishy when you press lightly on top.

- Remove the brownies from the oven and allow to cool.

- Meanwhile, whisk with a fork all the ingredients for the frosting until thoroughly combined. Spread evenly on top of the cooled brownies and set aside to cool to room temperature to keep the fudge-ness or chill to harden the brownies.
