Vegan Banana Oat Muffins

Vegan Banana Oat Muffins

Serves: 8

Ingredients

  • 160g oat flour

  • 15g flaxseeds

  • 2 tsp baking powder

  • 1 tsp ground cinnamon

  • 1/2tsp baking soda

  • 120ml almond milk

  • 65g almond butter ( or coconut oil )

  • 60ml maple syrup, optional

  • 2 tsp vanilla essence

  • 1 ripe banana ( about 200g )

  • 150g extras ( such as sunflower seeds, goji berries, dried fruit, walnuts )

Method

- Preheat the oven to 175 degrees c, fan. Grease a muffin tray.

- Blitz all the dry ingredients in a blender until everything is well combined.

- Pour in the remaining ingredients and continue to blend until fully combined. Stir in the extras until dispersed evenly.

- Pour the batter into the 6 muffin holders and pop it in the oven to bake for 20 minutes, or until golden all over and a toothpick comes out with a few crumbs.

- Remove the muffins from the oven and allow them to cool. I love to serve thee muffins with coconut cream and homemade strawberry jam or if I use coconut oil, almond butter.
