Healthy Oat & Raspberry Bake

Oat & Raspberry Breakfast Bake
Prep time: 5 minutes
Cooking time: 30-45 minutes
Serves: 8
Ingredients
2 ripe bananas
200g oats
400ml milk
2 scoops vanilla protein powder (my favourite brand is MyProtein)
1tsp baking powder
1 tsp lemon zest
6tbp greek yoghurt
100g frozen raspberries
1 tbsp honey
3 tbsp peanut butter
1 tbsp coconut oil, melted
Method
Preheat the oven to 180 degrees Celsius.
Mash the bananas in a square baking tray, then add the oats, milk, protein powder, lemon zest, and baking powder into the tray. Stir everything until the ingredients are evenly combined.
Heat up the raspberries with the honey until melted.
Pour the raspberries over the oat mix.
Dollop spoonfuls of yoghurt over the oat mix then taking the other end of a spoon, draw some swirls in the mix to blend the raspberries and yoghurt into the oat mix, as well as give a nice pattern on top.
Pop your tray in the oven and bake for 30-45 minutes (check after 30 - it should be nicely browned on top and a skewer should come out clean when inserted in the middle)
Meanwhile, melt the peanut butter with the coconut oil in a microwave for 15 seconds, then stir to combine.
Once the bake is ready, let it cool for ten minutes before drizzling with the peanut butter sauce and serving!
