Banana Chia Porridge
Serves: 1
Ingredients
25g oats
1 banana, chopped
1 tbsp chia seeds
1/2 tsp vanilla extract
pinch salt flakes
almond milk
peanut butter gently warmed to drizzle
toasted sunflower seeds, pecans for crunch, optional
chopped dates or maple syrup/ chocolate sauce
Method
- Add the oats, half of the banana, vanilla and salt to a small saucepan. Pour over enough almond milk to cover everything.
- Set the pan over medium-high heat and bring it to a boil. Reduce the heat and stir constantly until thickened. Add in extra milk if needed.
- Once thickened until your liking, remove from the heat and pour into a bowl. Top with a drizzle of peanut butter ( I used 2 tsp ), the remaining half of the banana, seeds/nuts and finally something sweet to top it off.
