Banana Chia Porridge

Banana Chia Porridge

Serves: 1

Ingredients

  • 25g oats

  • 1 banana, chopped

  • 1 tbsp chia seeds

  • 1/2 tsp vanilla extract

  • pinch salt flakes

  • almond milk

  • peanut butter gently warmed to drizzle

  • toasted sunflower seeds, pecans for crunch, optional

  • chopped dates or maple syrup/ chocolate sauce

Method

- Add the oats, half of the banana, vanilla and salt to a small saucepan. Pour over enough almond milk to cover everything.

- Set the pan over medium-high heat and bring it to a boil. Reduce the heat and stir constantly until thickened. Add in extra milk if needed.

- Once thickened until your liking, remove from the heat and pour into a bowl. Top with a drizzle of peanut butter ( I used 2 tsp ), the remaining half of the banana, seeds/nuts and finally something sweet to top it off.
