Sticky Asian Marinated Chicken





Sticky Asian Inspired Marinated Chicken

Serves: 2

Ingredients

  • 320g chicken, cut into strips

  • 1 tbsp brown sugar

  • 50g sherry

  • 50g sweet chilli sauce ( preferably a brand with lower sugar- 40g and under )

  • 45g dark soy sauce

  • 1 knob ginger, grated

  • 2 tsp groundnut oil

  • rice, to serve

  • broccoli florets

  • spring onion, sliced

  • sesame seeds, to sprinkle

Method

- Combine the chicken and the first 6 ingredients in a medium-sized bowl. Cover and marinate for a few hours or overnight.

- When ready to serve, Boil some water and steam the broccoli.

- Meanwhile, remove the chicken from the marinade. Place the marinade sauce in a small saucepan and bring it to a boil. Reduce and simmer until thickened. Remove from the heat.

- Heat the oil on a griddle. Once hot, add the chicken strips and good on one side until nicely coloured and the dark stripes appear on one side. Flip and do the same on the other side.

- ( Pop the rice in the microwave for 2 minutes )

- Once cooked, brush the chicken strips with the marinade glaze. Serve over the rice alongside some broccoli florets and a sprinkling of sesame seeds.
