Banoffee Sundae

Banoffee Sundae
Serves: 2
Ingredients
1 banana, sliced
2 meringues, crumbled
1 digestive or hobnob, crumbled
1 small pot double cream ( about 150ml )
1 tsp vanilla
2 scoops vanilla ice cream ( I use Glace Soy Ice Cream but I've tried Halo Tops Salted Caramel Ice cream which is really nice too )
Toffee sauce, bought or homemade ( You can use caramel sauce instead )
Chocolate Sauce, to drizzle ( I used Sweet Freedom )
Toffee Sauce
20g light muscovado sugar
12g coconut oil
2 tsp ( about 12ml ) whole milk
2 tsp ( about 12 ml ) double cream
1/2 tsp maple syrup
Method
- First make the sauce. Combine the sugar, coconut oil and double cream, for the sauce in a small saucepan.
- Bring to a boil over medium heat, stirring all the time, until the sugar has completely dissolved. Stir in the maple syrup and turn up the heat a little bit.
- Allow the sauce to bubble for about a minute or until a toffee colour. Make sure to stir occasionally.
- In 2 pretty glasses ( yes, I only had champagne glasses ) Layer biscuit, sliced banana, sauce, meringue, cream, banana, sauce, a scoop of ice cream and finally finish with a drizzle of chocolate sauce a sprinkle of meringue and biscuit and any extra banana slices you may have. I added some blueberries but that is optional.
- You can do it in any order you like, you're going to eat it all anyway but this is the way I found got a bit of everything on every mouthful :)
