Super quick and easy decadent chocolate mousse

Total cooking time: 10 minutes

Super quick and easy decadent chocolate mousse

Serves: 1 large serving or two small

Ingredients

  • 50g dark chocolate (I find that Lindt 70% works really well)

  • 30ml water

  • pinch Maldon sea salt

  • 1 tsp vanilla essence

  • 1 egg, yolk and white separated

  • 10g caster sugar (icing sugar can also be used)

  • Whipped cream, to serve (optional)

Method

  1. Melt the chocolate in the microwave for 1 minute, stirring every 15 seconds

  2. Stir in the water, salt, and vanilla. Allow to cool for 5 minutes.

  3. Whisk in the egg yolk. Set aside.

  4. Whip the egg white until stiff peaks form. Add in the sugar and continue to beat until glossy peaks form.

  5. Fold the egg white into the chocolate mix until evenly combined.

  6. Pour the mousse mix into two ramekins or glasses. Cover with clingfilm and chill for at least 4 hours, or until set.

  7. Serve with whipped cream, berries, or anything else you like!
