Gooey Chocolate Cake with Forest Berries and Vanilla Cream

Kladkakka
Serves: 8
Ingredients
75g coconut oil
60g 70% dark chocolate
60g 85% dark chocolate
2 eggs
100-150g caster sugar
1/2 tsp vanilla essence
1/8tsp salt
1/2tsp baking powder
60g rye/spelt/wholemeal flour, sifted with husks added back in
Method
- Preheat the oven to 175 degrees c, fan. Line a pan ( I usually use a loaf tray but for a traditional kladkakka, use a small circular pan ).
- Melt the coconut oil and chocolate in a bowl in the microwave, stirring between bursts. Let it cool once melted.
- With an electric whisk, whisk the eggs and sugar until pale and fluffy. Stir in the vanilla
- Whisk and sieve the dry in a separate bowl. Stir the dry into the egg mixture until fairly combined, but not completely, then fold through the chocolate until combined.
- Pour the batter into the lined pan and bake for 15-20 minutes, depending on how 'kladdy' you want it :)
- Remove the cake from the oven and allow to cool completely before slicing into 8 pieces.
- Serve with reduce fat Creme Fraiche, super ripe, sweet berries and a few leaves of mint.
Note that for the photos I had divided the recipe in half and made it quite thin so it cooked more and made it less "Kladdig" ( gooey ) but if follow the recipe and fill a smaller deeper dish, it will be a lot richer and gooeir.
