BBQ Salmon Sandwich
Serves: 2
Ingredients
1 salmon fillet ( I used a pre-cooked honey salmon from Aldi )
1/2 small onion, thinly sliced
1 tsp balsamic vinegar
1 tsp sugar
1 tsp butter ( about 7g )
sprinkle salt
handful salad greens
bbq sauce, to drizzle
a few slices of gherkins ( I used the ones from IKEA- they are my fav )
squeeze lime juice
2 slices brown/rye, Gluten Free or seeded bread
Method
- In a small frying pan, add the butter and heat until melted. Throw in the onions and stir to coat.
- Once slightly softened, add in the balsamic vinegar and sugar. Stir everything together and reduce the heat to medium.
- Fry the onions until softened and sweetened. Sprinkle a little salt over and set aside.
- Tear the salmon fillet apart with you fingers and divide between the two slices of bread.
- Drizzle the BBQ sauce over the salmon. Top with the onions, gherkins, a handful of salad leaves and a squeeze of lime for good measure :)
* This is also nice with some finely chopped tomatoes however it gets a bit harder to eat- half the toppings fell of mine :P
