I've recently discovered this 'luxury' yoghurt at Aldi's and it is honestly such a treat and it's YOGHURT. My favourite is the rhubarb however after eating then regular ( defy not two a day ) I realised that each pot had around 20g of sugar. WHAT. So I made it my challenge to make something just as creamy, rich and delicious but a lot healthier. So this is the result! I hope you like it :)



Creamy Fig Orange pot with a Crunchy Topping
Serves : 2
Ingredients
For the Yoghurt
200g greek yoghurt
20ml maple syrup ( I melted 10g sugar with stevia with a bit of water then stirred this in )
50ml orange juice
1/2 tsp vanilla
For the Figs
4 figs, quartered
2 tbsp liqueur ( I used cointreau )
2 tbsp orange juice
For the Topping
80g mixed nuts, chopped
20g oats
1/8 tsp salt
1/4 tsp vanilla
1/4 tsp cinnamon
20g sugar with stevia
1 tbsp water
Method
- Whisk all the yoghurt ingredients together, except the orange juice, in a bowl. you can either leave it like this or to get it more indulgent, scoop the yoghurt into 2 sheets of kitchen roll and pop it into a bowl. Let it sit in the fridge for a few hours, the longer you leave it, the thicker it gets.
- Once thickened, stir the orange juice in. Set aside
- For the figs, heat the liqueur and sugar with a splash of water in a small sauce pan. Bring to a boil then reduce. Add the figs and toss everything briefly. Remove from the heat and set aside.
- For the nuts, heat the sugar, vanilla, salt, cinnamon and water in a pan.
- Once the sugar had dissolved, add the nuts and oats and keep stirring until everything caramelises. The longer you cook it the crunchier it gets, but make sure not to burn it!
- To assemble, divide the yoghurt between two pots. Layer the figs on top with some of the syrup and sprinkle over the topping!
