Irish Soda Bread

Serves: 1 small loaf

Ingredients

  • 180- 200g spelt flour, sifted

  • 180 - 20og strong white flour

  • 1 tbsp sugar

  • 1/2 tsp baking powder

  • 3/4 tsp baking soda

  • 3g salt plus more to sprinkle

  • 3 tbsp porridge oats ( I used a super mix by Quakers )

  • 1 egg, whisked

  • 45g honey

  • 6 tbsp lemonade ( Or beer if you have it )

  • 20g butter, melted

  • 150ml buttermilk


Method

- Preheat the oven to 170 degrees Celsius, fan. Grease a tray and set aside

- In a medium sized bowl, combine the dry ingredients. Add the honey and lemonade. Stir everything together.

- Pour in the butter and egg and stir well.

- Slowly add in the buttermilk and combine until it forms a firm, slightly sticky mixture - it shouldn't stick so much that it peels onto your hands.. You might not need all the buttermilk!

- Flour your hands and a surface. Lightly knead the dough, then roll into a ball. Cut a cross on the top and flour the top.

- Pop it onto the tray and bake for 30-45 minutes. Remove and cool in a tea towel.

*This bread is great when served with butter for breakfast or for extra protein, as well as smoked salmon or pate.
