Summer Berry Cheesecake

I love cheesecake. And it annoys me because it's the one thing you can't make healthy. It ruins the texture or taste and it just doesn't work. But if you like cheesecake, then this is worth every calorie.




Summer Berry Cheesecake
Serves: 6 slices
Ingredients
For the base
85g digestives
30g sugar
3 1/2 tbsp butter, cut into cubes
1/8tsp salt
For the Filling
336g cream cheese
120g sour cream
1 vanilla pod, seeds scraped
60ml double cream
100g caster sugar ( I used 50g sugar with stevia)
2 small eggs ( about 90g ), + one yolk
1 1/2 tbsp wholemeal/spelt flour, sifted
For the Topping
140g summer berries
70g sugar ( Again, I used 35g sugar with stevia )
squeeze lemon juice
1 tsp pectin powder, optional ( it just firms the topping )
Method
- Preheat the oven to 180 degrees celsius, fan.
- Blend all the base ingredients, except the butter together. Once a powder forms, add in the butter and blitz until it becomes crumbly.
- Press into a pan of your choice and bake in the oven for 10-15 minutes or until golden around the edges then remove and cool.
- Meanwhile, whisk the cream cheese and sour cream until smooth. Add in the sugar and vanilla. Beat again until smooth,
- Crack in the eggs and yolk then beat again until fully incorporated.
- Stir in the flour until just combined then quickly stir in the cream.
- Pour the filling over the base and cook for about 45 minutes or until set around the edges and glossy/wobbly in the middle.
- Turn off the oven and let it cool for an hour with the door closed before popping it in the fridge to cool for a few hours or even better, overnight.
- For the topping simply combine all the ingredients together in a small saucepan with a splash of water. Bring to a boil then reduce to a simmer to thicken.
- Pour over the filling and continue to chill until everything is set!
* You can cook the cheesecake in a water bath to prevent top cracking if you like, just make sure the bath is only half filled with water!
