Creamy Berry Posset
Serves: 2
Ingredients
120ml double cream ( you can use half cream, half greek yoghurt )
20g sweetener ( I used 10g sugar with stevia )
10ml lemon juice
1 vanilla pod, seeds scraped
15g mixed frozen berries
berry coulis, to top, optional
Method
-I n a medium saucepan bring cream and to boil over medium-high heat. Stir continually until the sweetener had dissolved.
- Bring to a boil and cook for 20 seconds, stirring the whole time. Remove from stovetop.
- Pour in the lemon juice and stir to combine. Throw in the berries, Stir twice. pour into ramekins.
- Cover tightly with plastic wrap and chill, minimum of 2 hours. the longer you chill it, the more intense the flavours and the creamier it becomes, so overnight is best.
- Top with coulis and let everything chill for another 30 minutes.
* This dessert is also lovely with the insides of a passionfruit stirred in, instead of berries, served with a passionfruit curd/coulis, a dollop of greek yoghurt and some coconut granola sprinkled on top.
