Almond butter cookie bars

Serves:

Ingredients

  • 50g coconut sugar

  • 60g almond butter

  • 1/2 tsp vanilla essence

  • 20ml almond milk

  • handful dark chocolate chunks ( I roughly chopped some Lindt 70% chocolate )

  • 110g oat flour

  • 25g oats

  • flat 1/2 tsp baking powder

  • pinch salt

Method

- Preheat the oven to 180 degrees celsius, fan.

- Cream the butter and coconut sugar together. Add in the vanilla and milk, then stir.

- Add in the oats, flour and baking powder and combine until it forms a dough. Throw in the chocolate chips and gently combine with your hands.

- Press the mixture into a pan of your choice. It doesn't matter it just affects how thick they are and the cooking time.

- I like to cook mine until a toothpick inserted comes out clean around the edges and still glossy looking in the middle.

- Let it cool for a minimum of an hour.
