Chewy Vegan Cookies

Serves: 8

Ingredients

  • 56g vegan butter ( You can use half coconut oil half butter or substitute some almond butter except this reduces the chewiness a bit )

  • 100g coconut sugar ( you can use demerara sugar then lightly blitzed- I found this made the cookies chewier )

  • 30ml almond milk

  • 1 1/2 tsp vanilla essence

  • 120g sifted spelt flour

  • 1 tsp cornstarch

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 80g chocolate, cut into chunks

  • salt flakes, to sprinkle

Method

- Preheat the oven to 180 degrees c. Line a baking tray with tin foil.

- Start by creaming the butter and sugar together.

- Once fluffy, add in the milk and vanilla. Stir to combine.

- Add in the rest of the dry ingredients. Once it forms a dough, chuck int eh chocolate, reserving a few to top.

- Divide the dough into 8 balls and flatten them with your palms fairly flat. Space the discs evenly on the tray and be for 10 minutes. Allow to cool and enjoy!
