Gluten Free Chewy Cookies

These are amazing. No exaggeration. If you like crunchy on the outside and chewy on the inside then these are the perfect cookies for you. Even better they are gluten-free and healthy.

Gluten-Free Chewy Cookies

Serves: 12 small ( as seen in pictures ) or 6 large

Ingredients

Base

  • 1tsp milled flaxseeds mixed with 2 1/2 tsp water

  • 50g soft coconut oil

  • 60g almond butter

  • 75ml maple syrup

  • 25g sugar mixed with stevia ( or 50g coconut sugar )

  • 1/2tsp vanilla

  • 120g almond flour

  • 15g oat flour, GF if needed

  • 15g buckwheat flour

  • 1/2tsp baking soda

  • pinch salt

Method

- Preheat the oven to 180 degrees, fan. Line a baking tray with baking paper.

- Combine the first 6 ingredients in a medium-sized bowl.

- In a separate bowl, whisk the remaining ingredients until there are no lumps left. Tip this into the wet mixture.

- Stir until just combined. It should be a thick sticky mixture but firm enough so you can pick it up and roll it into soft balls.

- Roll into 12 balls and place on the baking tray. Flatten all the cookies then pop them into the oven for around 14 minutes or until lightly golden. Remove from the oven and allow them to cool.

*Combos

Dark chocolate and ginger

- Grate 1/2 inch of ginger then squeeze the juice out into the wet mixture. add 40g chopped crystalized ginger to the dry mixture.

Chocolate sauce

15g coconut oil, melted

10g cacao powder

5ml maple syrup

- Combine everything together. Drizzle this over the cookies once they have cooled.

Chocolate Orange

- Add 1/2tbsp orange juice to the wet mixture along with 2 tsp orange zest and 40g dark chocolate chunks or chips to the dry
