Chocolate Oatmeal

This is the creamiest, most luxurious oatmeal I have made so far. It's almost like a pudding. But you need to make sure you cook it a while and over a lower heat than usual to achieve this consistency. I also recently tried a Banana chocolate sauce from my favourite brand , Sweet Freedom.
Yes, it says for milkshake but who says you can't use it for oatmeal?



This was another time I made it, but didn't cook it as long so it wasn't as creamy, but I liked the photo too much to delete it...

Chocolate Oatmeal
Serves: 2
Ingredients
60g oats
4 tsp milled flax seeds
240ml coconut milk ( I love the brand Alpro )
1 tbsp lucuma powder ( or remove I just like the extra nutrition and sweetness )
3 tbsp cacao powder
1 tbsp sweetener ( I used stevia )
2 tsp coconut oil
tiny pinch salt
To serve
3 tbsp almond butter
2 small bananas, sliced
2 tbsp mixed seeds
chocolate sauce or any kind of syrup to drizzle, optional
*This is also nice served with some mixed berries heated up in a sauce with a splash of water and a touch of maple syrup and vanilla.
Method
- Simply heat all the oatmeal ingredients together in a small saucepan over a medium-high heat. Stir regularly.
- Add more liquid if it gets too dry and cooks until your desired thickness.
- Serve with the toppings and enjoy for breakfast. If you have time I have this on a cold winter's day for lunch too!
