Courgette Chicken Stir-fry
Serves: 4
Ingredients
4 chicken breasts, cut into chunks
oil, to fry
2 small courgette, diced
4 garlic cloves, minced
2 red chilli, sliced
2 inch ginger, grated
20 button mushrooms, sliced
2 small red onion, diced
black pepper, to season
60g roasted cashews
coriander and lime, to serve
For the sauce
150ml hot water
chicken stock cube
2 tbsp hoisin sauce or oyster sauce
2 tbsp soy sauce
2 tsp sesame oil
2 tsp sugar
1 tbsp cornstarch mixed with 1 tbsp water
Method
- Combine all the ingredients for the sauce in a small jug and set aside.
- Heat the oil in a frying pan over medium-high heat. Once hot, add the ginger, chilli and garlic for 30 seconds.
- Add in the onions and fry for a further 3-4 minutes or until soft. Add in the chicken chunks and cook until coloured all over.
- Add in the courgette and mushrooms and black pepper. Fry everything until softened.
- Pour in the sauce and stir until it coats everything. Cook until the sauce has thickened and clings to the stir-fry.
- Serve with a sprinkle of cashew nuts, a squeeze of lime and coriander.
