Pret Style Yoghurt Bircher

Serves: 2

Ingredients

For the Bircher

  • 300g greek yoghurt ( I use Fage 0% fat )

  • 1 small apple, grated a squeezed to remove some of the juice

  • 25g granola

  • 25g pistachios

  • 15g raisins

  • 10g cranberries

  • 15g goji berries

  • 10g mixed seeds

To Top

  • 10g mixed seeds

  • 10g pistachios

  • 10g raisins

  • handful pomegranate

For the Berry Compote

  • handful frozen mixed berries

  • 2 teaspoons sugar

  • splash water

Method

- Start by whisking the yoghurt and the apple in a large bowl. Once combined add in the rest and thoroughly combine.

- Pop this mixture in the fridge and let the yoghurt soak everything mixed into it for at least 5 hours to thicken the yoghurt and make it more deliciously creamy.

- Combine the 'To Top' ingredients in a small bowl and set aside for serving, later ( except for the pomegranate ).

- Make the compote by combing everything in a small sauce pan and heating on a medium high heat. Once the berries have started to thaw, mash everything with a fork and stir with a spatula. Once the compote looks thick enough, remove it to a small tub or bowl and fridge ( It will continue to thicken as it cools and you don't want it to thick )

- When ready, scoop the mixture into two bowls and top with the pr-made mixture and sprinkle with pomegranate. Dollop each bowl with half of the compote and enjoy!
