Superfood Thai Salad

Serves: 2

Ingredients

For the Salad

  • 2 handfuls of edamame beans

  • 3 cups of kale

  • 2 medium carrots, cut into matchsticks

  • 1 bell pepper, sliced vertically

  • handful or coriander, roughly chopped

  • 2 spring onions, sliced

  • handfuls cashews, lightly toasted

For the Dressing

  • Squeeze lime juice

  • 1 lemongrass, thinly sliced

  • 2tsp sesame oil

  • 1tsp honey

  • 1tbsp rice wine vinegar

  • 1tbsp water, to thin

  • 1tbsp dark soy sauce

  • 1 garlic clove, minced

  • 1tbsp groundnut oil ( olive oil can also be used )

  • Sweet Chilli Sauce, to serve*

Method

- Start by whisking together all the dressing ingredients. Pour into a ramekin and set aside.

- Prepare all your salad ingredients and add them to a large bowl. Briefly toss everything together.

- Pour over the dressing and stir everything to coat everything evenly.

- Sprinkle with cashews nuts and serve with thai marinated chicken or any other meat or simply it it alone!

*I loved this salad even more with sweet chilli sauce or I had a mango, lime and chilli sauce.
