1 avocado, sliced length ways
juice of 1 lime
75g sugar snap peas, sliced into matchsticks
1/2 cucumber, sliced into matchsticks
50g radishes, finely slices

herbs ( coriander, mint or basil work best with this salad)

For the Dressing
1 clove garlic, minced
1 red chilli, finely chopped
1/2 inch ginger, grated
2tsp fish sauce
juice of 2 limes
2 tsp honey

Method
- First make the dressing by combing all the ingredients together. pour into a small dish and set aside.
- Next assemble the salad placing all the ingrains into a large shallow bowl and briefly stirring everything together. Pour over the dressing and toss everything again.
- Sprinkle over the peanuts and serve with your favourite meat ( I use marinated meat that has similar flavours to this salad ) or eat it alone for a light dinner or lunch.
Hope you enjoy this quick and crisp salad!
