Asian Salad


​Asian Salad

Serves: 2 ( on its own ) or 3 as an accompaniment

Ingredients

For the salad

  • 40g edamame beans

  • 1 avocado, sliced length ways

  • juice of 1 lime

  • 75g sugar snap peas, sliced into matchsticks

  • 1/2 cucumber, sliced into matchsticks

  • 50g radishes, finely slices

  • 2 spring onions, chopped

  • 2 handfuls spinach

  • herbs ( coriander, mint or basil work best with this salad)

  • roasted peanuts, to serve

For the Dressing

  • 1 clove garlic, minced

  • 1 red chilli, finely chopped

  • 1/2 inch ginger, grated

  • 2tsp fish sauce

  • juice of 2 limes

  • 2 tsp honey

  • 2 tsp sesame oil

Method

- First make the dressing by combing all the ingredients together. pour into a small dish and set aside.

- Next assemble the salad placing all the ingrains into a large shallow bowl and briefly stirring everything together. Pour over the dressing and toss everything again.

- Sprinkle over the peanuts and serve with your favourite meat ( I use marinated meat that has similar flavours to this salad ) or eat it alone for a light dinner or lunch.
