Chewy Chocolate Chip Oat Bars


Crispy. Chewy. Sweet mellowed out with the subtle bitterness of the dark chocolate. Healthy with oats, flax seeds and goji berries and perfect for a mid morning or you know, any time of the day snack. After making a batch of ten of these bars, 3 of them were left by the end of the night.. whoops.

Not totally sure if that's a good sign or bad...

These are really easy to make and don't take too long. I mean, I made the whole batch of these before school one morning, and I'm not one of these people to get us at 06.30. 7.30 if i'm lucky.

So I would say fool proof and so tasty. You can add dried fruit, spices, nuts, seeds, whatever combos you like. Cranberry and white chocolate. Dark chocolate and coconut. Anything you like!

Chewy Chocolate Chip Bar

Serves: 10 bars

Ingredients

  • 50g oats ( GF if needed )

  • 20g milled flax seeds

  • 20g rice crispies

  • 17g dark chocolate chips ( I used 85 % )

  • 100g honey

  • 48g almond butter ( or peanut butter if you prefer that )

  • 20g coconut sugar ( normal brown works too )

  • 1tbsp coconut oil, melted

  • 1/4tsp vanilla essence/paste

Method

- Line a pan of your choice with tin foil. Depending on the size you may get more or less bars of a different thickness.

- So this is simple. Melt the sugar, honey, oil, nut butter and vanilla over a low heat until smooth.

- Increase the temperature and let the mixture boils for 1 minute. Stir half way to ensure it doesn't burn on the bottom.

- Meanwhile combine the remaining ingredients.

- Pour the wet mix over the dry and combine everything.

- Press the mixture firmly into the pan and let it cool before pressing in the chocolate chips.

- Put the mix into the fridge to chill overnight. Cut into bars and store in an air-tight container.
