Whole, healthy and pure ingredients. Only a touch of sugar in the whole recipe. These are so tasty, I've even put them down as being a dessert. But probably more suitable as a snack. An indulgent snack.

Gluten free and refined sugar free. What more can you want? They're chewy and crunchy with a subtle sharpness provided by the goji berries, which compliments the sweetness of the chocolate.

These really are wonderful treats to look forward to as a mid-morning to mid-afternoon snack.
Paleo Nut Bars
Serves: 6 bars
Ingredients
For the base
48g almonds
48g walnuts
60g oats
1tbsp flax seeds
1tbsp chia seeds
15g goji berries
44g honey
coconut oil
1tbsp nut butter ( I used almonds )
1/4tsp cinnamon
For the Chocolate Topping
50g coconut oil
30g raw cacao powder
2tbsp maple syrup
Method
- Preheat the oven to 180/350F degrees celsius, fan.
- Line a pan with tin foil or baking paper.
First make the base... - Half the amount of walnuts, almonds and oats. Blitz half and chop up the other half ( obviously not the oats ), until powdery. Remove to a large bowl.
- Add the remainder of the nuts and oats to the bowl. Toss in the seeds and goji berries and stir everything.
- Heat the honey, nut butter and coconut oil in a small sauce pan over a medium-low heat. Stir constantly.
- Once they mixture is smooth, turn up the heat to medium-high and let it boil for roughly 30 seconds.
- Pour the wet over the dry and stir everything quickly. Press it into the pan
- Bake it in the oven for 20 minutes, or until it's beginning to go golden around the edges. Remove and let it cool.
Next make the topping...
- Melt the coconut oil.
- Stir in the cacao powder until no lumps remain.
- Stir through the maple syrup until the sauce thickens slightly.
- Pour the sauce over the base and chill for several hours in the fridge to seal everything together.
- Cut the bar into 6 smaller ( Be careful because they're delicate and crumbly ). Sprinkle salt over. These keep fresh for 1 week but you could probably do two...they never last that long for me!
