Superfood Walnut Brownie

These brownies don't look the tastiest. For me, anyway, when I hear 'brownies', the words fudgey, rich, gooey, chewy... and these don't look particularly like that but they taste amazing.

Perfectly finished with the paleo frosting, these are a healthy and chocolate-craving satisfying dessert. Or even better for a mid-day snack or breakfast, cause it's healthy enough and who said chocolate wasn't aloud for breakfast anyway?

If you want some of that fudge, chewy aspect some brownies have, Make sure the dates aren't fully combined with the dry, so there are a few small chunks left. I actually prefer this way since the brownies have more texture and taste to them.

Careful not to overtake these as well otherwise they become quite dry and kind of just, you know... fall apart in crumbs. Rule of thumb here: Better to undertake than over!

As I was trying to get a couple good shots of the brownies for this blog. a little someone, wanting to be in the centre of attention all the time, interrupted my little photo shot...

Anyway, on with the recipe:

Superfood Walnut Brownies

Serves: 6 small brownies

Ingredients

For the Brownie

  • 35g oats

  • 15g goji berries

  • 27g chopped walnuts

  • 1 1/2 tbsp ground flaxseeds mixed with 3tbsp water (flax egg)

  • 2tbsp + 1tsp ground flaxseeds

  • 45g raw caco powder

  • 3tbsp coconut oil, melted

  • 66g dates ( if they're dry, soak them in boiling water before hand for a few minutes )

  • 36g brown sugar ( or coconut sugar works too )

  • 18g almond flower

  • a heaped 1/3tsp baking powder

  • 1/4tsp salt

For the Frosting

  • 50g coconut oil, softened

  • 25g honey

  • 35g raw cacao powder

  • salt, to sprinkle

Method

- Preheat a fan oven to 175 degrees celcius. Line a pan with baking paper or tin foil.

- start by placing the goji berries in the blender, Blend them until the become a coarse fourths consistency.

- Add in the oats, dates, salt and baking powder into the blender. Blitz it in pulses, either until it all becomes a coarse flour or until chopped slightly but the dates are still 'chunky'.

- Remove the mix to a bowl and add in the flaxseeds (not the flax egg!), sugar and almond flour.

- Combine the coconut oil with the cacao powder n a separate bowl.

- Once combined, add on the flax egg and stir it through until combined.

- Add the cacao mixture into the oat mix and combine everything together with a spoon. Once combined, stir in the chopped walnuts.

- Press the mixture into the lined pan. Pop it into the oven for 10-15 minutes or until a toothpick inserted comes out with a few crumbs attached.

- Meanwhile, to make the frosting, Cream the honey with the coconut oil with a wooden spoon. Once fully combined, slowly stir in the cacao powder ( not all at once or it will puff up in a cloud of smoke ). Set aside

- Once the brownies are ready, remove them from the oven and allow to cool for at least an hour.

- Spread the frosting as evenly as you can over the brownies. Pop in into the fridge to chill. Once hardened up, cut the brownies into 6 slices with a sharp knife.

- Store the brownies in a air tight tub in the fridge or at room temperature for 1 week. You can try longer but I'm not sure how fresh they will taste.
