Jamaican (Chicken) curry


This takes a while but how it's worth it! Plus it is actually really easy. Basically stick it in a pot. Coconut. Serve it very hot. Coconut.....

No? Good old Caribbean song. This is my twist on the traditional Jamaican curry so I hope you like it.

After I came back from Jamaica and realised not once did I have a Jamaican chicken curry. Jerk chicken and pork? Definitely. Sailfish and Acee? Obviously. but Jamaican curry? wait a sec...

So let's get started

Jamaican (Chicken) Curry

Serves: 4

Ingredients

  • 800g sweet potato for vegetarian or 4 chicken breasts

  • one and a half red bell peppers, sliced

  • 1 large red onion, diced

  • 1 large red chilli, minced

  • 8g thyme leaves

  • 5 garlic cloves, minced

  • 3cm ginger, peeled and minced

  • 2 spring onions, sliced

  • 360g pineapple, chopped into chunks

  • 4 medium tomatoes, cut into quarters

  • 110ml rum

  • 400ml coconut milk

  • 1 vegetable/chicken stock cube

  • 1 lime, juiced

  • 2tsp allspice

  • 3 heaped tsp curry powder

  • 1tsp brown sugar, or more to taste

  • 2tbsp cornstarch mixed with 2tbsp water

  • Coconut rice, coriander and Jamaican hot sauce to serve (optional, of course ^^)

method

- First chop up the sweet potato.

Gather your ingredients together. I know 8g of thyme is an award amount so if you're not too bothered about perfect amount, this is roughly how much you need.

Prepare your vegetables.

Heat 2tbsp coconut oil in a casserole dish. Once hot, fry the sweet potatoes until browned slightly. Then just chuck in the rest of the ingredients. Ginger, chilli, garlic, spices,

vegetables, fruit... You get the idea.

Then pour in the sauce ingredients: Coconut milk, rum, lime juice and the stock cube.

Then just pop it into the oven and cook for about 1 hour 30 minutes, stir every half an hour or so to check how it's doing. If it needs more water or if it's too watery etc.

It should look like this when it's ready. Stir in the sugar and cornstarch.

Serve in a bowl with or without rice. If i'm doing it vegetarian, I serve it as it is however if i use chicken I will serve it with coconut rice.
