Breakfast 'Eaton Mess'

Chewy, sweet, and delicious, this granola is gluten-free and adapted from The Happy Cookbook.

Paired with smooth melted chocolate, freshly banana luxurious creamy almond butter. Are you sold yet? This tastes so great it looks like you're eating a dessert, and tastes like it too. The granola in this recipe is my favourite as well I always find myself nipping into the kitchen and snacking on it!

No oats and simply made with nuts, fruit and a bit of coconut to bind it, this is suitable for anyone following the paleo diet or, like me, just loves paleo food. You can also save yourself the effort and sprinkle bought granola on top or even crumbled wholewheat digestives!

Breakfast 'Eaton Mess'

Serves: 2

Ingredients


  • 2 bananas, sliced in half ( I've also used sliced apples for this which goes really well )

  • vanilla yoghurt

  • 20g 85% dark chocolate

  • 2 tsp coconut oil

  • 2 tbsp almond butter ( you can use peanut butter as well )

  • handful granola ( see recipe below )


For Paleo granola*

  • 70ml maple syrup

  • 100ml coconut oil, melted

  • 1 tsp vanilla essence

  • 1/2 tsp salt flakes

  • 2 tsp cinnamon

  • pinch allspice

  • 80g apricots, chopped

  • 60g raisins

  • 70g brazil nuts, roughly chopped

  • 60g desiccated coconut

  • 50g mixed seeds


*You can add in 50-100g oats if you wish

Method

- Preheat a fan oven to 180 degrees. Line a large baking tray with parchment paper.

- Start by making the granola first. Simply mix all the dry ingredients in a small bowl.

- Melt the coconut oil and maple syrup together in a small saucepan. Once a few bubbles appear, stir in the vanilla then pour over the dry mixture.

- Get your hands in there and mix everything until well combined.

- Spread the granola mixture onto the baking tray and bake for 15-18 minutes, or until golden. Remove and cool.

- 5 minutes before the granola is ready, get out two plates and place two banana halves on top of each. Melt the chocolate in a ramekin then once melted, stir in 2 tsp coconut oil.

- Dollop some yoghurt over the bananas, alongside 1 tbsp almond butter. Sprinkle over the granola and finally drizzle the chocolate evenly between the two plates.
