Asian Chicken salad bowl- with a satay sauce


This is one of my favourite salads with so much flavour bursting in every mouthful ( I know that sounds like some cheesy advert) and it's just filled with goodness from the avocado and the nuts and basically everything else in it.

Yes I know what you're thinking. That sauce doesn't look the best, but don't lose interest just yet! make it- don't look at it- and pour it over the salad and you'll see how wonderful it is.

You can add noodles or rice to this if you want a bit more volume to it and feel free to have this for lunch as well although make sure you're not seeing anyone after cause your breath may stink of garlic ( if you put a lot in like I do, that is.)

Asian Chicken Salad Bowl with a Satay sauce

Serves: 2

Ingredients

For the salad

  • 1tbsp olive oil

  • 2 chicken breasts

  • seasoning

  • 1 avocado

  • 1 carrot

  • 3/4 red bell pepper

  • 2 handfuls watercress (or any other salad leaf you like)

  • 2 spring green onions handful of coriander (optional mint and basil too - if you're feeling fancy)

  • 2 lemongrass stalks

  • sprinkle of roasted cashews

For the dressing

  • 2 cloves garlic, minced

  • 1 large red chilli

  • 1tbsp hoisin sauce

  • 1tbsp rice wine vinegar

  • 1tbsp sesame oil

  • 2tsp curry powder

  • a quick drop of fish sauce ( careful, it's quite strong)

  • 30g crunchy peanut butter

  • additional water to thin

Method

- Slice the chicken breasts into strips and season them well.

- Heat the oil in a medium frying pan. Once hot add the chicken and fry until white on the inside. Remove to a bowl and set aside.

- Rinse all the fruit and vegetables that will be going into the salad. Cut them into long strips (or if you can't be bothered just cut them how you like!)

- Add them to two bowls,makinge sure to get an equal half of each ingredient in each bowl, sparkling the herbs, cashews and lemongrass on top.

- To make the space simply stir all the ingredients together until well combined.

- Voila! you're ready to go. Feel free to add rice or noodles to this for a slightly heavier meal. I hope you enjo ity!
