Easy Banana Oat Pancakes

These are so nutritious and hearty i'm not sure if you could even call them pancakes. My other pancake recipes are healthy (of course) but these aren't just good to eat but actually provide loads of benefits. You'd be silly not to have this for breakfast!
I always say there's no better way to start the day than to have a great meal. Perhaps a run on a sunny clear morning. A stroll in the woods playing you favourite song. Obviously not everyone has access to that so a great substitute is knowing you've had a fuel filled breakfast.
These pancakes are super quick and easy with only a few simple ingredients.
Easy Banana Oat Pancakes
Serves: 2 people
Ingredients
1/2 a large banana (75g)
100ml almond milk
1 egg
1/2tsp vanilla
1/2tsp cinnamon
1tsp baking powder
75g oats, blitzed into a fine powder
25g buckwheat flour ( optional, can replace with oat flour )
* You can add 2 dessert spoons of any health supplement e.g.. chia seeds, flax seeds, any sort of health powders (cacao, mac, lucuma, baobab- just experiment! )
Method
-Measure out all the ingredients and just pop them into a blender and blitz until everything is fairly smooth. It will be a little bitty from the oats but thats fine. It adds more texture, however if you prefer them lighter blend the oats into a fine powder before hand.
- Heat 1 tbsp of oil in a large frying pan, over a medium high-heat. Once it's HOT ( I left the oil to heat for about 3-4 minutes ) label some of the batter into the pan.
- Once bubbles start to appear around the edges and they look golden underneath once lightly listen, flip them and cook for a further minute or 2 until it's golden.
- Repeat that step with the remainder of the batter and serve with berry compote, jam, chocolate sauce, seeds, maple syrup...whatever you like.
* These pancakes are really nice with dark chocolate chips and blueberries added to them with a sprinkle of lightly toasted seeds and a drizzle of maple syrup to serve!
You can serve them plain with berry compote, vanilla scented yoghurt, chocolate sauce, almond butter, fresh berries and banana.... the possibilities are endless! or have it all in one. but sometime just some fresh berries and maple syrup is the best.
