Overnight Oats- Morning Booster
Serves: 1 if your greedy like me or 2 if your... normal
Ingredients
42g oats
15g chopped almonds
10g mixed seeds
10g sultanas (or raisins)
15g chia seeds
15g dates
20g dried figs
1tsp cinnamon (I always like to add more)
200ML almond milk (or any kind)
2 tbsp greek yoghurt
1 apple, grated
Directions
The night before
-Combine all the dry ingredients together in a bowl. It will look like any old muesli mix.
-Pour in the almond milk and stir a few times. Cover with foil or cling film. Put it in the fridge and leave the mixture to soak overnight.
The next day
-Take the mixture out of the fridge. The liquid should have reduced rapidly and soaked into all the ingredients.
-Fold through the yoghurt and grated apple.
-Top with homemade compote and a sprinkle of goji berries... or not, it's up to you!
