Marinated Chicken with Cous Cous and Tzatziki
Serves: 2
Ingredients
For the chicken
2 chicken breasts, cut into chunks
20ml extra virgin olive oil
1 tbsp lemon juice
2 tbsp seasoning ( I used a hot and spicy but you can use any spice mix )
For the salad
2 large tomatoes, sliced
4 tbsp parsley, roughly chopped
2 handfuls mixed salad leaves
1 orange, peeled and segmented
For the Cous Cous
70g cous cous
1 tin chickpeas, rinsed and drained
1 orange, juice and zested
1/2 red onion, finely minced
2 tbsp mixed seeds
Tzatziki, to serve ( I made my own )
Method
- A few hours before you want to serve this dish, make the marinade and massage it into the chicken. Place it in a bowl and cover it. Chill for a few hours.
- When you're ready to serve, preheat the grill to medium setting and line a tray with baking paper or tin foil.
- Pop the chicken onto the tray and cook it under the grill for around 10 minutes, depending on how big you cut your chicken.
- Make the Cous Cous by mixing all the ingredients, except the orange juice, together in a medium-sized mixing bowl.
- Bring the orange juice and 50ml water to a boil in a small saucepan and immediately pour over the Cous Cous. Cover with tin foil and let it sit for 5 minutes.
- Meanwhile, prepare the salad ingredients place them on one side of a plate.
- Spoon half of the Cous Cous beside the salad and the chicken on top. Dollop some tzatziki on top and your meal is ready!
