
Polish Chicken Gyros Kebab
Serves: 4
Ingredients
For the chicken
600g boneless chicken thigh fillets
1 tbsp olive oil
2 tbsp Polish gyros spice mix
For the salad
1/2 red onion, finely chopped
2 beef tomatoes, finely chopped
4 pickled cucumbers or beetroot, finely sliced
lettuce leaves
For the sauce
2 cloves garlic, finely minced
1 tsp Polish herb salt
1/4 tsp paprika
150ml sour cream
50ml yoghurt
2 tsp Polish mustard
Rice, to serve
Method
Cook the rice to your liking
Prepare the chicken by mixing the chicken, spice mix and olive oil together and place in the fridge to marinate for 10 minutes.
Make the sauce by mixing everything together in a small bowl.
Once the chicken has finished marinating, heat a large, lidded frying pan over a medium-high heat. Add in the chicken and cover. Stir occasionally. Fry until golden all over and cooked through.
To serve, place the lettuce leaves at the bottom of the shallow bowl. Add a large scoop of rice on top. Place 1/4 of the fried chicken on top of the rice, followed by the onions, tomatoes and cucumbers/beetroot. Drizzle some of the sauce on top and serve!
