Middle Eastern Falafel Wrap

This recipe was inspired by the quick glimpse I caught of a menu on the outside of a Middle Eastern restaurant around Borough Market.

Everything else sounded dull but this sounded delicious and since I didn't have time to try it, I compromised that I would simply try to recreate it myself once I was home from London. And well, here's the result...

Middle Eastern Falafel Wrap

Serves: 4

Ingredients

For the falafel

  • 1 small onion, finely diced

  • 1-2 cloves garlic, minced

  • 1 small red chilli, chopped

  • 1 can chickpeas

  • bunch parsley, roughly chopped

  • 2 tbsp buckwheat flour, plus extra

  • 1 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp turmeric

  • 1 tsp paprika

  • salt and black pepper, to season

  • sesame oil, to fry

For the Garlic Yoghurt

  • 150 low fat greek yoghurt

  • 1 tbsp lemon juice

  • 2 tsp lemon zest

  • 1 clove garlic, minced

  • black pepper

For the Wraps

  • 4 tbsp rose harissa ( you can make your own )

  • 2 tbsp mint, roughly chopped

  • 2 tbsp parsley, roughly chopped

  • 4 tbsp pomegranate seeds

  • pickled red onions, to serve

  • 4 handfuls spinach

  • wraps, to serve

Method

- Add the chickpeas to a food processor and blend until a paste forms. You may need to scrape down the sides every so often.

- Add in the onion and garlic, seasoning, spices and parsley and flour. Pulse until everything is fully combined.

- Sprinkle some flour onto a plate. Take small, walnut-sized handfuls of the mixture and roll into balls. Roll the balls around in the flour.

- Drizzle a little oil in a frying pan. Once hot, add in the falafel. Cook until browned all over, stirring every so often.

- Pat them dry with kitchen roll and set the falafel aside for serving.

- Prepare the ingredients for the wrap and make the yoghurt sauce by simply whisking all the ingredients together.

- To assemble the wraps, Spread 1 tbsp rose harissa down the middle. Dollop some of the yoghurt sauce on top. Add 4 falafel on top, 1 tbsp mixed chopped herbs, 1 tbsp pomegranate seeds, some pickled onions and to finish, some leaves of spinach.

- Fold the sides in and then the bottom of the wrap over and roll as neatly and tightly as you can. Spoon some more yoghurt sauce in the opening and enjoy as a light dinner or a a tasty lunch!
