  • salt and black pepper

  • 2 tbsp dijon mustard

  • 2 tsp tabasco sauce

  • 2 tsp worcestershire sauce

  • handful fresh oregano

  • 1 flat tsp garlic granules

  • 1 flat tsp smoked paprika

  • 4 crushed oat crackers

  • 3 cloves garlic, minced

  • 1 small red chilli, chopped, optional

  • 2 heaped tsp nduja paste

For the caramelised onions and pineapple

  • 2 large red onions

  • knob butter

  • drizzle olive oil

  • 2 tsp brown sugar

  • drizzle high quality balsamic vinegar

  • 3 avocado, flesh scooped out

  • 10 pineapple rings

To Serve*

  • buns

  • rocket

  • chilli jam

  • sriracha

  • lime wedges

Method

- To make the burgers is sooo simple. All you have to do is combine all the prepared ingredients together in a large glass bowl. Use your fingers to thoroughly combine all the ingredients together.

- Place the burger mixture into a burger press and place it between two small bits of baking paper. Set the prepared burgers aside.

- Heat the butter and olive oil in a griddle over medium-high heat. Once melted, add the onions, and stir to coat everything. Cover with a lid or tin foil and stir every so often.

- Once softened, sprinkle over the sugar and leave to cook, uncovered for 2 minutes before drizzling over enough balsamic to coat the onions. Stir and reduce until the liquid thickens and clings to the onions. Remove the onions and place them on a side plate.

- Next, add the pineapple sliced to the griddle with some of the juice. Reduce all the liquid then cook them for 3-5 minutes, or until golden stripes appear, before flipping and doing the same. Remove to a plate.

- In a small bowl, mash the avocado. Set aside

- Add a good drizzle of olive oil to the pan. Once hot, carefully add a few burgers at a time to the pan. Cook until nicely coloured on one side then flip.

- Place the cooked burgers onto a few sheets of kitchen roll and flatten with a spatula.

- Dollop a tbsp of chilli jam on the bun. Place a burger on top then add 2 slices of pineapple, a spoonful of onions, a heaped tbsp of avocado and finally a drizzle of sriracha. Finish with some rocket leaves. Squeeze over some lime and you're set to go.
