Greek Marinated Steak with Roast Potatoes and Tzatziki

Serves: 2

Ingredients

For the Steak

  • 2 lean steaks

  • 75ml ketchup

  • 1 lemon, juiced

  • 2 garlic cloves, minced

  • 1 heaped tsp mustard

  • 1 1/2 tsp olive oil

  • 2 tsp paprika

For the Tzatziki

  • 125ml greek yoghurt

  • 1/2 small cucumber, grated

  • 1 garlic clove, minced

  • 1 1/2 tsp olive oil

  • 2 sprigs mint leaves, finely minced

For the Potatoes

  • 2 baking potatoes, cut into chunks

  • 1 tbsp olive oil

  • zest of one lemon

  • 1 tsp paprika

  • sea salt and black pepper

  • sriracha and marinated chilli lives, to served ( you gotta have the olives, trust me )

  • salad leaves

Method

- A few hours before you're ready to eat this dish, mix all the marinade ingredients together in a shallow bowl. Add the steaks and massage the marinade into the steaks. Cover and pop it in the fridge for a few hours.

- When you're ready to eat, pop the grill on to medium heat and line a tray with tin foil. Scatter the potato chunks on top then drizzle over the oil.

- Add the rest of the potato ingredients on top and toss the potatoes in everything then spread them out evenly. Pop them under the grill to cook. After 10 minutes, flip all the potatoes.

- Do the same after another 10 minutes then finish them off for another 5 minutes so they're all puffed up and nicely coloured on the outside and fluffy on the inside.

- While they cook, stir all the tzatziki ingredients together in a medium-sized bowl. Chill in the fridge.

- 5 minutes before the potatoes are cooked, add some oil to a large frying pan over medium-high heat and add the steaks. fry until your desired rare-ness.

- To serve, add a handful of salad leaves to the plates. Add a steak on top. Divide half the potatoes between the two plates and dollop with some tzatziki I love this with sriracha ( as I have recently found out, a lot of Greek restaurants have ) and olives!

(Ignore the red sauce, it was an experiment that didn't work but I couldn't be bothered taking new photos xD ).
