Indian Spiced Chicken Kebabs
Serves: 2
Ingredients
180g chicken, sliced into chunks
2 heaped tsp curry paste ( I used tikka masala )
100g cucumber, finely diced
100g tomatoes, finely diced
100g low-fat Greek yoghurt
2 small cloves garlic, minced
good squeeze of lemon juice
2 wholemeal flatbreads or pitta
hot sauce and rocket, to serve
Method
- Start by mixing the chicken and curry paste in a small bowl. Heat a medium-sized frying pan over medium-high heat. Once hot, add the chicken and stir. Cover and stir. Keep doing this until the sauce has reduced and starts to cling/crispen around the chicken.
- While this is cooking, prepare the tomatoes and cucumber. Mix the yoghurt, garlic and lemon juice in a small bowl. Set aside.
- Warm the flatbreads up in the microwave or oven slightly.
- Serve the chicken with the yoghurt sauce, flatbreads, salad optional hot sauce and rocket.
This dish is so easy, so quick and so delicious- just try it and see!
* This chicken is also great served with raita and mango chutney and a slaw instead of rocket.
