Smashed Avocado and Salmon on Toast ( 2 variations )


Asian Inspired Salmon Toast

Serves: 2

Ingredients

  • 2 slices seeded farmhouse bread ( or any bread you like )

  • 1 avocado

  • 1 small red chilli ( or 1 tsp chilli powder )

  • 2 tbsp lime juice

  • 1 1/2 tsp soy sauce

  • 1 1/2 tsp sesame oil

  • knob ginger, grated

  • 2 spring onions

  • cucumber slices, to serve

  • handful coriander

  • 2 lime wedges

  • 60g smoked salmon

  • 2 small handfuls pickled slaw

  • sesame seeds, to sprinkle

Method

- Mash the avocado, lime juice, chilli, sesame oil and ginger in a medium-shoed bowl. Set aside.

- Toast the bread then act quickly so the toast doesn't go cold or soggy!

- Spread the mashed avocado on top of the toast. Divide the salmon between the slices of toast. Place a few cucumber slices on top, the slaw, few leaves of coriander and a sprinkle of seeds and a squeeze of lime.

I love to eat this as a delicious, refreshing and high-protein dinner. Or if i've got enough time I'll make this for lunch, which I usually do when I have leftovers from the night before.

Smashed Avocado and salmon with Sweet Yoghurt Dressing

Serves: 2

ingredients

For the Smashed Avocado

  • 2 avocados, flesh scooped out

  • 1 lime, juiced

  • 2 small cloves garlic, minced

  • drizzle extra virgin olive oil

  • 1 small red chilli, finely minced

  • 2 tbsp coriander, finely chopped

  • salt and black pepper

  • 60g smoked salmon

To Serve

  • 2-4 slices rye bread

  • 2 spring onions, finely sliced

  • 2 large tomatoes, diced

  • sunflower seeds

  • mixed salad leaves

  • drizzle sweet balsamic dressing

For the Yoghurt Dressing

  • 100g greek yoghurt

  • 1 tbsp lemon juice

  • 1 tsp honey

Method

- Mash the ingredients for the smashed avo together in a large bowl. Set aside.

- In a small bowl, mix the ingredients for the yoghurt dressing together. Set aside.

- Prepare the tomatoes and onions. Place a handful of salad leaves on each plate then drizzle with the balsamic dressing.

- Either toast the rye bread or leave it as it is and place it to the side of the salad leaves. Dollop some of the avocado on top of each slice of bread and spread it out.

- Place the tomatoes, spring onions and a splash of seeds.

- finally layer the salmon on top and sprinkle some chilli flakes and black pepper with a drizzle of yoghurt dressing to finish.
