Roast Ham and Brie Sandwich with a Honey Mustard Sauce

Serves: 1

Ingredients

  • 2 slices seeded farmhouse bread

  • handful rocket

  • 3 slices honey roast ham or a handful or ham chunks

  • 6 slices brie

  • 1 1/2 tbsp apple sauce ( you can use apple slices instead )

  • Black pepper

Honey Mustard Sauce

  • 1 heaped tsp yoghurt

  • 1 heaped tsp light mayonnaise

  • 1 heaped tsp dijon mustard

  • 1/2 tsp english or sweet mustard

  • 1/2 tsp lemon juice

Method

- Preheat the oven to 200 degrees c, fan.

- Place a small handful of rocket on top one slice of bread. Place the ham on top and spread over some applesauce or apples.

- Top with the brie slices and season with black pepper.

- Press another slice of bread on top and press down. Pop it onto a lined tray and heat in the oven for 10 minutes, flipping half way and pressing down ( if you have a toastie machine, use that! )

- While it's cooking, whisk all the ingredients for the sauce in a ramekin. Give a generous dollop of the sauce over the toastie and enjoy the tastiest lunch ever.
