Healthy Cookie Dough Bites

Vegan, raw, guilt-free, refined-sugar free and delicious. These are inspired by Livia's kitchen 'nuggets'. They were so delicious and whenever i try something I love, I make it my mission to recreate it myself as close to the original as possible and I have found a recipe with two slight variations: 1 closest to the original and one that's more cookie-dough tasting so you can try both and see which one you like best, flip a coin and pick one. Whatever you like but these are very delicious and satisfying and great as a snack.



Raw cookie Dough Bites
Serves: 12 bites ( 2 servings )
Ingredients
40g oat flour ( or half blended chopped dates and half oat flour )
1 1/2 tsp vanilla powder
pinch salt
10ml coconut oil melted
5 ml maple syrup ( or less if using dates )
water, if needed to combine the dough
ground flaxseeds, healthy powders etc , optional
20g dark chocolate, melted ( I used lindt 70% because that's my favourite )
Method
- Simply combine all the ingredients in a blender until fully combined.
- Roll the dough into smaller 5g balls. Chill until hardened or pop in the freezer for 15 minutes.
- Melt the chocolate in a small bowl then roll the cookie dough bites in it.
- Remove with a spoon and pop onto tin foil then chill until hardened.
- Eat them chilled or leave at room temperature for softer cookie dough bites.
