Superfood Cacao Energy Balls


These. Are. SO GOOD. Now I eat a lot of cacao, so i'm use to it's bitterness. So these little balls of goodness are completely raw with no added sweetening so they can be quite bitter. But feel free, if after you've made the dough, to add some honey or maple syrup to sweeten them a bit.

One small little ball (or two) is enough to power you through the day until your next meal. They're chewy and fudgey. Personally, they give me the same satisfaction dark chocolate gives but these are even healthier. I often have these as a dessert after dinner but you could have them whenever you wanted.

The great thing is: since they're not baked and completely raw, they last forever. You could just make a load, pop them in the fridge and keep them for months with them still holding all the flavour and all the goodness.

I'm kinda obsessed with goji berries at the moment and thought they worked perfectly in this recipe to add to the brownie texture. so of course those had to go in. The coconut oil is optional but it helps firm them up and you know, gives a little more nutrition too.

Superfood Cacao Energy Balls

Serves: 8 balls

Ingredients

  • 100g dates (approx. 6 medjool dates)

  • 25g goji berries

  • 25g pistachios

  • 50g almonds

  • 3tbsp cacao powder (about 27g)

  • 2tbsp chia seeds

  • vanilla extract

  • 30g coconut oil, melted

Method

- Just pop everything into the blender, except from the coconut oil.

- When the mixture is starting to look all blended and crumby, add in the coconut oil to get it to start combining.

- Then just roll them into 8 30g balls and you're ready to go!

- These can be stored at room temperature or in a tub in the fridge for... well who knows how long these last!
