Curry Spiced Beef Wrap

Thai Chicken Wrap
Serves: 2
Ingredients
1 steak, fat removed and cut into strips
black pepper, to season
2 wholemeal wraps
25g red onion, sliced
50g red pepper, sliced
60g pineapple, diced
rocket, to serve
For the Sauce
2 tsp curry paste
2 tbsp hoisin sauce
2 dessert spoons soy sauce
2 tbsp rice wine vinegar
2 tsp honey
1 garlic clove, crushed
2 tbsp water
Method
- Heat a little bit of oil in a small pan over a medium-high heat. Once hot, add the onions and fry until slightly softened. Add in the peppers and pineapple.
- Add a splash of water and add the steak slices. Cook until all sides are browned. Season
- Whisk all the ingredients for the sauce together in a small bowl then pour into the pan.
- Stir to coat everything in the pan then reduce the heat. Simmer until the sauce has reduced and started to cling around the beef, peppers and onions.
- Put a handful onto each wrap then evenly divide the steak on top. Wrap up and enjoy for lunch or as a light dinner!
