Salmon Noodle Salad
Serves: 2
Ingredients
For the Dressing
4 tsp fish sauce
1 tbsp sweetener
knob ginger, grated
1 small red chilli, minced
1 small lemongrass, sliced
1 clove garlic, minced
45ml lime juice ( about 1 1/2 limes )
2 tbsp sesame oil
2 tbsp toasted sesame seeds
For the Salmon
2 salmon fillets
1 tbsp olive oil
black pepper, to season
1 tbsp dark soy sauce
100g noodles ( I used high protein lentil noodles from M & S )
1 avocado, sliced
150g broccoli, steamed
4 springs onions, sliced
handful coriander
handful of mint leaves
2 carrots, peeled into ribbons
2 tbsp roasted peanuts, optional
Sriracha, to serve, optional
Method
- The method for this is really simple - it's more about the preparation. Start by whisking the dressing ingredients in a small bowl.
- Heat the oil in a medium sized frying pan over a medium-high heat. Season the salmon fillets and then add them to the pan once hot. Fry until cooked all the way through, adding the soy sauce juice before and tossing to coat the salmon.
- Meanwhile, toss the cooked noodles, dressing and remainder of salad ingredients to a large bowl, saving the peanuts for serving. Toss everything together.
- Divide evenly between to plates and add the salmon fillets on top. Sprinkle with peanuts and enjoy!
