Warming Spiced Pear Porridge
Serves: 1
Ingredients
45g oats
2 tsp flax seeds
250ml almond milk
For the Spiced Pear
1 pear, sliced vertically ( try to use super hard pears to add a bit of crunch to this )
2 tsp coconut oil, melted
1 tbsp stevia sugar
1 tsp maple syrup
1/2 tsp vanilla essence
5 cardamom seeds
1 tsp cinnamon
1 tsp mixed spice
pinch salt
1 tbsp cognac ( or armagnac ), optional
For the Caramelised Nuts*
45g mixed nuts
1/2 tsp cinnamon
pinch sea salt
1/8tsp vanilla essence
10g sugar with stevia ( or 20g of coconut sugar/ xylitol etc. )
1 tsp water
*top with roasted almonds, seeds, cranberries etc. for an easier option :)
Method
- Preheat the oven to 180 degrees celsius, fan. Combine all the ingredients for the pear together in a small bowl.
- Pop the pears into a small tray. Pour over the mix. Bake it in the oven for 15 minutes or until the pears are softened with a bit or crunch. Remove from the oven.
- Combine all the ingredients for the oatmeal in a saucepan. Bring to a boil then reduce. Stir regularly. Cook it until your desired thickness.
- Heat a small frying pan over a medium heat. When hot, add the sugar, sea salt, cinnamon and water and mix until fully combined. Let everything melt.
- Add the nuts and mix until fully incorporated. Stir regularly until the sugar starts to crystallise around the nuts. Remove onto some tin foil and let it cool.
- Scoop the porridge into a shallow bowl. Place the pear slices on top and drizzle over some of the syrup from the tray. Sprinkle over the nuts and enjoy!
