Greek Baked Fish
Serves: 2
Ingredients
2 Cod fillets, chopped into thirds ( or other white fish )
drizzle of olive oil
juice from half lem
on
salt and black pepper
knob butter plus olive oil
1 red onion, sliced
2 cloves garlic, minced
1 red chilli, minced
250g tomatoes, chopped
180ml water
60ml white wine
1 heaped tsp tomato puree
1 tsp paprika
1/4 tsp cinnamon
2 bay leaves
2 tsp sugar ( or more to taste )
mixed salad leaves, preferably rocket
Method
- Place the fish fillets into a large enough roasting tray. Drizzle over the olive oil, and lemon juice, and season. Set aside.
- In a medium-sized frying pan, heat the olive oil and butter over medium-high heat. Once hot, add the onions and fry until soft and lightly coloured.
- Add the chilli and garlic and fry for 30 seconds before adding in the spices. Stir briefly before adding the tomatoes, water, wine and puree.
- Stir to combine everything and reduce to a simmer. Add the sugar and bay leaves. Preheat the oven to 190 degrees celsius, fan.
- At this point you can cook it for as long as you want, depending on how rich you want the flavour to be.
- Pour the sauce over the fish and bake for 15-20 minutes or until cooked through. Serve with potatoes or bread or for a lighter dish serve it with salad.
